Myth – You Can’t Make Gluten-free Sourdough

Earlier today I heard a strange sound. It sounded as though something had fallen, and I feared it was the tray with all of my seeds and seedlings. But that wasn’t it. One of the sourdoughs had escaped its container. The lid – that had been screwed on tightly – was lying next to the jar and the sourdough was bubbling over. I managed to catch everything and scooped out a few decilitres of sourdough before I cleaned the outside of the jar and put the lid back on.

This called for an impromptu bake session. I made sourdough buns with chia seeds on top. While they were baking, I heard a whooshing sound. Another one of my sourdoughs was about to pop the lid and I managed to get it to the kitchen before it did. I made another batch of sourdough buns with some of that sourdoug.

In other words, yes, you can absolutely make a sourdough that is gluten-free and active. Here below are a few photos of the sourdoughs. People who say you can’t either want you to purchase more bread, or they want to prevent you from making your own. Sometimes both.
